Set yourself up for healthy eating during the week with this easy, make-ahead breakfast. Once delivered, store in the refrigerator and only reheat a piece every morning – 45-60 seconds in the microwave should do it. Then top it off with fresh fruit and have a delicious, very tasty breakfast.

Vegan Cinnamon-Apple Baked Oatmeal

- 2 1/2 cups plain old oats
- 2 tsp ground cinnamon
- 1 tsp powder
- 1/2 tsp salt
- 2 1/4 cups unsweetened soy milk
- 2 sweet apples, grated and cored (like Honeycrisp)
- 2 tbsp maple syrup
- 1 1/2 tsp vanilla extract
- 1/2 cup walnuts, chopped
- 2 cups strawberries, sliced
- 1 cup raspberries
- 1 cup blackberries
Instructions
Preheat the oven to 375°F (190°C) and lightly line an 11-by-7-inch baking dish.
In a large bowl, combine the oats, cinnamon, baking powder, and salt. Add the almond milk, grated apple, maple syrup, and vanilla extract, and stir until well combined. Pour the mixture into the prepared dish and spread it well. Sprinkle the chopped walnuts on top. Bake for about 35 minutes, or until the oatmeal is set and lightly golden.
Meanwhile, in a small bowl, gently combine the strawberries, raspberries, and blackberries. Divide into 6 air pockets.
Let stand 5-10 minutes before cutting into six pieces. Cool well, then store each piece in an airtight container for easy transport.
To reheat, microwave for 60-90 seconds, or until heated. Top with cold berry mixture.
