Size Chocolate Covered Raspberry Bites


Valentine’s Day is the day many of us take the opportunity to tell our loved ones how much we value them. Whether that’s another significant other, the ladies on your Galentine’s party, or your kids, chocolate covered fruit bites are a great way to do that.

They are a delicious healthy treat any time of the year!

Chocolate covered raspberries get a boost

Chocolate covered fruit is a favorite in our house. I will make this dark chocolate fondue sometime to add fruit and homemade marshmallows. Although chocolate covered fruit can be a healthy treat, it can be tricky to get it to work sometimes.

If you’ve ever covered your chocolate covered raspberries or other fruit you may have noticed this. The shiny chocolate that falls out looks anything but edible. These chocolate covered fruit bites have the same taste, but better.

I’m making these with some cute heart molds that are perfect for Valentine’s Day. You can use any type of silicone you want as long as it makes it soft. But instead of adding raspberries to the chocolate, we first do the raspberry filling. It is flavored with maple syrup and baked with chia seeds.

Research shows that maple syrup is not just sugar, but a variety of minerals, antioxidants, and unique anti-inflammatory compounds. Chia seeds are a great source of fiber, but they have many other benefits. These include supporting blood pressure and digestion, reducing inflammation, and even helping to improve anxiety and depression symptoms by strengthening the gut.

Raspberries are also rich in vitamin C, fiber, and antioxidants. Chocolate Covered Fruit Cakes are naturally colorful, fun to decorate, and perfect for little helpers in the kitchen. My older children have no problem helping out with these things. Also, they were gone that afternoon!

Plans and tricks

You can use different types, but I chose hearts for these. If you don’t have a good silicone mold on hand, you can also make them without one. Just sprinkle a small dollop of jam on the skin, sprinkle, and then dip in the chocolate to soften it.

Start with a small amount of maple syrup, taste, and adjust to your liking. I prefer to be on the tart side. These keep well in the refrigerator for up to a week. You can also store them in an airtight container in the freezer for up to a month. Fair warning: if you want to leave anything for the freezer you can double the battery!

Chocolate Covered Raspberry Bites

They taste like chocolate covered raspberry jam…but better.

  • In a bowl, whisk the raspberries with maple syrup, chia seeds, and vanilla until thick and jam-like. Allow to rest 5-10 minutes for the chia to infuse.

  • Pour the mixture evenly into 10 2-inch silicone heart pans, filling almost to the top and smoothing the surface.

  • Cover at least 4 hours or overnight until full strength.

  • Melt the dark chocolate in the coconut oil until smooth.

  • Remove the cooled heart from the mold and dip in the chocolate until fully coated.

  • Sprinkle with frozen fruit if desired.

  • Place on a sheet of paper covered with water and freeze for 10-15 minutes until firm.

  • Serve immediately from the freezer or allow to cool before eating.
