You can love turkey sausage without the sodium, additives and preservatives found in store-bought versions. What? Make your own sausage patties with this low sodium recipe! Pair each patty with a full English muffin and tomato slices for a complete breakfast. To save time in the morning, prepare the sausage patties in the refrigerator until you’re ready to serve.

  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 2 tsp fennel seeds
  • 1 lb (450g) 99% lean turkey
  • 1/2 tsp salt, divided

Instructions

Heat a non-stick skillet over low heat. Add olive oil, onion and garlic. Repeat frequently until the onion is soft and translucent, about 5 min. Add the fennel seeds, and stir for another minute. Allow the mixture to cool and transfer to a bowl.

Add the ground turkey, ¼ tsp salt, ¼ tsp pepper, oregano and red wine vinegar to the onion mixture. Using a fork or fingers, mix the ingredients until well combined. Form the meat mixture into six patties.

Heat a non-stick skillet over low heat, and sprinkle the surface with cooking water. Cook in batches of 2 or 3 patties for about 5 minutes on each side until the meat forms a golden brown, or until the sausage reaches an internal temperature of 165° F. Transfer the patties to a separate plate.

Crack the eggs into one skillet, spacing them at least 1 inch (2.54cm) apart, and cook over medium heat until the whites begin to set, about 3 minutes. Gently turn each egg and cook until the whites are set and the yolks are still runny, about 2 minutes. Spread one egg over each patty and season with salt and pepper. Do this in batches.

Toast English muffin, and assemble a sandwich with sausage patty, fried egg and sliced ​​tomato.

TIPS TO USE: If you want to freeze these turkey sausage patties for another meal, place a square of parchment paper between each patty to keep them from sticking together. Then put them in a ziplock bag and freeze.
