Not your ordinary salad, this recipe makes a great salad with the right amount of flavor to spice things up. Snow peas and cabbage combine with rotisserie chicken and a spicy Asian dressing, while a slice of sweet mandarin orange adds flavor. With 38 grams of protein and 7 grams of fiber, it will keep you going long past lunchtime.

When you’re on a low-carb diet, it can be difficult to get enough fiber. This recipe is low in total carbs, but thanks to all the veggies, is high in fiber.

Asian-inspired chicken salad with sesame seeds
Efrata
- 2 tbsp plus 1 tsp rice wine
- 1 tbsp dark sesame oil
- 1.5 tbsp white wine
- 1 tsp tamari or low sodium soy sauce
- 1 tbsp honey
- 1/2 tsp ginger, fine
- 1 lb (454g) boneless rotisserie chicken breast, diced
- 5 cups napa or green cabbage, finely shredded
- 4 cups mixed greens
- 2 cups snow peas, shelled
- 1 red bell pepper, small
- 4 small Satsuma oranges, cut and torn into wedges
Instructions
In a small bowl, combine the wine, oil, tahini, tamari, honey and ginger. Take away.
In a large bowl, combine the chicken, cabbage, greens, snow peas and bell pepper. Add 2/3 of the dressing and toss to combine. Arrange the salad on a plate 4. Top with oranges and sprinkle with the remaining dressing. Serve immediately.
