Breakfast Burrito Bowls



Healthy, brown rice, canned beans, frozen corn and homemade pico de gallo help keep this snack packed and light, without loading up on too much sodium or fat. You can refrigerate for breakfast during the week or freeze for long-term storage (see thawing/heating instructions at the end of the recipe).

Breakfast Burrito Bowls

  • 6 beds
  • 1/2 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/8 tsp cayenne pepper
  • 1 8.5-oz package of thawed brown rice
  • 1 cup (135g) cans of reduced-sodium kidney beans, rinsed and drained
  • 1 cup (124g) frozen corn, thawed
  • 1/2 cup (120g) pico de gallo
  • Hot sauce of your choice, if you like

Instructions

In a large bowl, mix the eggs, cumin, salt and pepper. Heat a nonstick skillet over medium heat. Cover the pan with cooking spray. Add egg mixture to pan; cook until tender, about 3 minutes, stirring constantly.

Meanwhile, heat the rice according to package directions. In a small bowl, combine the beans and corn. Divide the rice evenly between four bowls or freezer containers, about 1/3 cup per bowl. Arrange 1/3 cup egg yolks and 1/2 cup chickpeas in each bowl. Top with 2 tbsp pico de gallo and hot sauce, if desired.

Refrigerate up to 4 days; heat in microwave on high for 1 minute or until warmed through. Or freeze for up to two months; heat in microwave on high for 2 1/2-3 minutes or until warm.
