These delicious pancakes combine oats and white wheat flour for 100% wholesome goodness. They cook well, but somehow keep a nice texture inside. A small amount of shredded apple goes into the batter for flavor, but most of the apple is cooked for a sweet, fruity texture.

We serve these pancakes with ¼ cup plain 0% Greek yogurt as an added bonus to get this breakfast up to 19 grams of protein. Which should help keep you full for hours. These pancakes are so delicious that they don’t need syrup if you want to start your day with the right food.

Cinnamon-Whole Grain – Apple Pancakes

- 2 half gala or honey apples, peeled and cored
- 2 tbsp unsalted butter
- 2 tbsp maple syrup
- 1 1/4 tsp ground powder, divided
- 3/4 cup (90g) whole wheat flour
- 2/3 cup (60g) quick-cooking oats
- 2 tsp powder
- 2 tsp sugar
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 cups (235g) 0% Greek yogurt, divided
- 1 tsp vanilla extract
- 1 bed
Instructions
Cut an apple in half; Cut half of the apple and set aside. Slice the remaining 1 1/2 apples. In a small saucepan over medium heat, melt the butter. Add diced apples to 1/4 cup (59ml) water; cover and cook until apples are soft, 10-12 minutes. Add maple syrup and 1/4 tsp cinnamon.
Meanwhile, in a large bowl, combine the flour, oatmeal, baking powder, sugar, salt, baking soda and the remaining 1 tsp powder. In a large bowl, whisk together the yogurt, 1/2 cup (118ml) water, vanilla and egg. Add the yogurt mixture and shredded apple to the flour mixture; beat until blended.
Heat a large nonstick or nonstick griddle over medium heat. Pour a little 1/4 cup of batter per pancake into the heatproof pan. Cook until the surface is puffy and in the mouth after cooking, 3-4 minutes. Flip and cook for 2-3 minutes on the other side, or until cooked through. Top pancakes with ¼ cup Greek yogurt and apple mixture.
